Shrimp Bowl with Pineapple and Black Bean Salsa

These shrimp bowls are a perfect and super fast way to get a balanced meal on busy days.

Serves: Makes 4-6 Bowls




Shrimp Bowl with Pineapple and Black Bean Salsa

Ingredients for the Bowls

2 pounds large shrimp, peeled, deveined

¾ cup Olive Oil

½ cup Pineapple Balsamic Vinegar

Juice from 2 limes

2 tablespoons garlic, minced

1 tablespoon red pepper flakes (optional)

½ cup fresh parsley, chopped – you can also chop more parsley and add into the rice for extra flavor

4 cups cooked rice or riced cauliflower

1 avocado, diced


Ingredients for the Pineapple and Black Bean Salsa

1 teaspoon Olive Oil

1 teaspoon Pineapple Balsamic Vinegar

2 cups fresh pineapple, diced

1 can of black beans, drained and rinsed

1 red onion, minced

1 bunch fresh parsley, minced


Some other toppings for your bowls might include:

Corn, shredded cheddar, hot sauce, sautéed mushrooms, chic peas, broccoli, sweet potatoes, tomatoes, peppers, a dollop of sour cream….The possibilities are endless.


Directions
  1. Take the shrimp and place in a bag or bowl with the olive oil, balsamic vinegar, juice from two limes, garlic and red pepper flakes.

  2. Marinate for at least 30 minutes or prepare the night before. Make sure the shrimp is fully covered and add extra oil and vinegar if needed.

  3. Grab a medium sized bowl and add the beans, pineapple, onion, parsley, olive oil and balsamic vinegar. Mix all together and set aside.

  4. In a medium frying pan (or grill) add some more olive oil and cook the shrimp for about 2-3 minutes on each side until the shrimp are pink.

  5. Cook the rice and any other toppings you may want.

  6. Build your bowl by putting the rice on the bottom and then putting the shrimp, pineapple and black bean salsa, and avocado and any other toppings on top.

  7. Serve warm and enjoy!
