Roasted Brussels Sprouts with Apples and Pistachios

In this recipe, we're combining Brussels sprouts with the sweetness of apples and the crunch of pistachios to create a side dish that's a festive addition to your winter table. Roasted Brussels Sprouts with Apples and Pistachios


Ingredients

1 pound Brussels sprouts, trimmed and halved

2-3 apples, cored and diced

1 cup of shelled pistachios

8 slices of bacon, crisped (feel free to leave out the bacon if you need to make the dish vegetarian-friendly.)

2 tablespoons olive oil

salt and pepper


For the Dressing

1/2 cup olive oil

3 tablespoons Dijon mustard

2 tablespoons apple cider vinegar

1 tablespoon honey


Directions
  1. Preheat oven to 400 degrees.

  2. While the oven is warming up, grab a baking dish and place the halved Brussels sprouts, diced apples, and olive oil into the dish.

  3. Mix all together making sure everything is well-coated and season with some salt and pepper.

  4. Put into the oven and roast for 20-30 minutes.

  5. While they are roasting mix together the olive oil, dijon mustard, apple cider vinegar, and honey together, and crisp the bacon in a separate pan over medium heat on the stove.

  6. Take the Brussels sprouts and apples out of the oven and sprinkle with the shelled pistachios. Crumble the bacon on top drizzle the dressing over the dish and toss everything to coat.

  7. Serve warm or at room temperature.
