Pumpkin Baked Ziti with Sausage

Pumpkin makes everything taste better!

Serves: 4 Prep Time: 30 minutes




I’ve seen pumpkin used in everything from drinks to face scrubs to crackers. So why not in baked ziti? Last year I made a pumpkin mac and cheese that was amazing so this year I decided to step it up and add mix it into some baked ziti with sweet sausage.

Ingredients


1 box rigatoni noodles cooked 1 pound ground sweet sausage 1 small onion, diced 3 bay leaves 1 teaspoon nutmeg 1 tablespoon red pepper flakes 1 teaspoon cinnamon 1 cup dry white (drinkable) wine 1 cup vegetable broth 15 oz can pumpkin puree 1 cup grated sharp cheddar cheese 1/2 cup grated Parmesan cheese salt & pepper

Directions

  1. Preheat the oven to 350.

  2. Cook the pasta and set it aside.

  3. Brown the sausage in a medium-high heat pan until cooked.

  4. Drain and set aside.

  5. In the same pan, cook the onion, garlic, and bay leaves.

  6. Add the red pepper flakes, cinnamon, nutmeg, and salt and pepper, and cook one more minute.

  7. Add the wine, vegetable stock, and pumpkin puree and mix everything together.

  8. Stir in the cheddar and sausage and then add in the pasta before transferring it into a baking dish.

  9. Top with parmesan cheese and bake for 25-35 minutes until it bubbles.

Eat and enjoy with the rest of the white wine you used earlier!
