Lettuce Wraps with Greek Yogurt Chicken Salad

When you think of “healthy” recipes, you probably don’t envision chicken salad.

This recipe proves it is possible to make healthy chicken salad with no mayonnaise without losing taste and flavor. This easy, lightened-up version of traditional chicken salad has no mayo and comes together in just 20 minutes. By using Greek yogurt, grapes, and pecans you reduce unwanted calories and fat. I also serve the chicken salad on lettuce wraps to further reduce calories while still adding plenty of protein. This healthy chicken salad should last 3-5 days in the fridge. After you make it, just be sure to cover it and place it in an airtight container, if anything is left over.


Ingredients


2 cups cooked chicken breast OR use a rotisserie chicken 1 cup Greek yogurt (I prefer nonfat or 2% if possible.) 2 tablespoons tahini ¾ cup dried cherries ¾ cup chopped toasted pecans ¾ cup halved red grapes 1 head of Bibb lettuce 4 tablespoons chopped fresh parsley 1 tablespoon Dijon mustard 1 teaspoon ground turmeric 1 teaspoon cumin 1 teaspoon chili pepper 1 teaspoon cinnamon salt and pepper


Directions

  1. In a large bowl, add yogurt, tahini, Dijon mustard, turmeric, cumin, chili pepper, cinnamon, salt, and pepper.

  2. Mix until smooth.

  3. Next mix in the chicken, dried cherries, grapes, toasted pecans, and parsley.

  4. Add more salt and pepper if needed and serve in Bibb lettuce cups.
