Honey Glazed Carrots with Roasted Walnuts & Feta

These carrots are super easy to make and also perfect when you have four bags of carrots in your fridge because, on your shopping trips, you forgot that you already bought carrots! This dish can be thrown together in five minutes and made with a handful of simple ingredients you probably already have in your pantry.


Ingredients


10-15 carrots, peeled (and cut if needed)

3 tablespoons olive oil

3 tablespoons honey

1 teaspoon rosemary

1 teaspoon salt

1 teaspoon pepper


Directions

  1. Preheat oven to 350 degrees.

  2. Line a baking sheet with parchment paper and prepare the carrots.

  3. In a medium bowl mix the olive oil, honey, rosemary, salt, and pepper together.

  4. Coat the carrots with the glaze in the bowl and then spread them out onto the lined baking sheet.

  5. Bake for 20-30 minutes, or until fully cooked.

  6. Remove from the oven, drizzle with more honey if desired, and enjoy!

Option: Sprinkle 1/4 cup of crumbled feta and 1/4 cup toasted walnuts on top.
