Ingredients
1 pound lean ground beef or turkey
2 tablespoons olive oil
1 large onion, diced
3 tablespoons taco seasoning, or I packet of store-bought taco seasoning
2 tablespoons garlic, minced
1 can (15 oz) black beans, drained
1 can (15 oz) diced tomatoes, undrained
1 can (15 oz) corn, drained
2 cans (4 oz) diced green chilies
2 cups beef broth
salt and pepper
Directions
In a large pot over medium heat, cook the ground beef or turkey until browned.
Drain any fat and put back into the pan and add diced onions and minced garlic, sautéing until the onions are translucent.
Sprinkle the taco seasoning over the meat mixture. Stir well to ensure the seasoning coats everything evenly.
Add the black beans, corn, diced tomatoes, and diced green chilies to the pot.
Stir everything together.
Pour in the beef broth, and bring the soup to a simmer.
Let it simmer for about 20-30 minutes.
Ladle the Easy Taco Soup into bowls, and let your guests customize their bowls with an array of toppings like shredded cheese, dollops of sour cream, chopped green onions, fresh avocado, and/or some tortilla strips.
This taco soup can be eaten just as is or even over rice.
