Chicken Soup with Gnocchi

A hearty alternative to noodles.


Serves 8

Prep Time: 20 minutes



Spring is soup season in New York so I made this basic chicken soup but instead of noodles, substituted gnocchi instead and it was delicious!



Ingredients


8 cups of Kettle & Fire Chicken Broth

Chicken torn into pieces from one roasted chicken

2 cups uncooked gnocchi

2 cups sliced or chopped carrots

1 cup chopped celery

1 cup chopped onion

1 tablespoon Italian seasoning

1 tablespoon chopped garlic

1 tablespoon olive oil

1/4 cup frozen peas (if desired)

salt and pepper


Directions

  1. In a soup pot, heat the oil and cook the onion, garlic, carrots and celery until translucent

  2. Add the chicken broth and chicken

  3. Add the gnocchi and cook all until tender

  4. Garnish with fresh chopped parsley or parmesan cheese (optional) and eat!
