Cheesy Chicken Nachos

Here’s another recipe that uses a rotisserie chicken for a super easy sheet pan favorite. Making your own nachos at home also guarantees that all the ingredients will be piled evenly over every chip which means lots of chicken, cheese, salsa, avocado, jalapeños, radishes, and, well, more cheese in every bite!


Cheesy Chicken Nachos

Perfect for game nights or casual gatherings, this recipe is a crowd pleaser that strikes the right balance between cheesy indulgence and savory goodness. Feel free to also add black beans, or get crazy and swap the avocado for some guacamole or spicy avocado creme sauce.


Ingredients

1 bag of your favorite tortilla chips

2 cups shredded rotisserie chicken

3 tablespoons of taco seasoning

2 cups cheddar cheese, shredded

1 cup prepared Pico de Gallo or salsa

1/2 dip black olives, sliced

2 radishes, thinly sliced

1 cup cotija cheese, shredded

1 ripe avocado

1 jalapeño, sliced and seeded

Sour cream and hot sauce for serving (optional)


Directions

  1. Preheat oven to 400 degrees.

  2. In a medium frying pan place shredded chicken and taco seasoning and a half cup of water and sauté until seasoning coats the chicken.

  3. Cover and spread tortilla chips evenly across sheet pan and top with seasoned chicken, black olives, shredded cheddar cheese, Pico de Gallo.

  4. Bake for ten minutes.

  5. Cover baked chips with jalapeños, radishes, avocado and shredded cotija cheese.

  6. Bake for 5 more minutes and serve right away so chips don’t get soggy.
