Cheers to soup season!

Bring on the cold and sweater weather, we are ready! Okay well maybe not really, but warm and cozy soups make it so much more bearable, right?

Ingredients
4 tablespoons olive oil
1 large onion, chopped
2 tablespoons garlic, minced
3 cups milk
4 cups chicken broth
1/4 cup flour
6 cups fresh (or frozen) broccoli
3 cups cheddar cheese, shredded, plus more for serving
1 tablespoon salt
2 tablespoons pepper
Directions
Add olive oil, broccoli, onion, garlic, milk, and broth into your slow cooker or large pot.
Cook until broccoli is tender.
Stir in cheddar cheese and extra milk if needed.
Mix the flour with water to make a roux and add to thicken the soup.
Grab your immersion blender and blend the soup until it has a creamy and thick texture. If you don’t have an immersion blender let the soup cool, transfer it into a blender, and then reheat.
Serve warm, topped with more shredded cheddar if desired, and/or serve in a bread bowl.
